My aunt and uncle visited me this weekend and, to celebrate, I made blueberry crumb bars.
The recipe is from the July 2011 issue of Matchbook Mag. It was super easy to prepare and proved to be totally delicious.

A few nights ago I made oven-baked breaded eggplant for dinner.
The eggplant turned out crispy and savory. The fact that it was oven-baked and not fried added some health value (however marginal), and made it much less of a mess to clean up. I also sauteed spinach, mushrooms, and carrots for a small side salad (devoured in my beautiful new bowl, no less!).

Since I’m currently at school in the middle-of-nowhere and don’t have a car, grocery shopping can be difficult (aka impossible). After venting my ever-increasing frustration to my mom, I got a very surprising phone call this evening.
My darling mom had found a magical website, www.netgrocer.com, which actually delivers to my itty bitty college town!

When I think of dinner, I think of color.
I often center my meal around a vegetable, and that vegetable is often zucchini. A few nights ago, I made the zucchini boats pictured above. The recipe was simple, and I improvised when I lacked certain ingredients. The result was a fresh, savory and delightful dish. Click here for the recipe.

Spanish Potluck
Last night, my house hosted a Spanish-themed potluck. I made guacamole (not pictured, sadly) and Oreo chocolate truffles with sea salt (not Spanish, but still good).
My housemate Richard made merenguitos, which were too beautiful not to photograph.
It was a delectable meal that I’m (still) recovering from today.
